Dill was the only herb left in the back porch planter that needed a serious haircut so I had planned for fish thinking a lot of dill could be used in the marinade or topping.
This marinade can be used for grilled or broiled cod and you don’t even have to dirty a bowl. I used ¼ cup tightly packed fresh dill – you can see in the photo that it’s quite a bit, but I still had ½ cup leftover. I put in ¼ t cumin because I thought it would be a nice color contrast for the photo but I didn’t think of putting in the paprika until afterward, so you see it is sprinkled over the top of the fish.

Cod with Dill Marinade
2 large cod fillets (enough for 4-5 people)
1 single serving container of organic vanilla Greek yogurt
¼ C fresh chopped dill
1/4 t cumin
1 clove crushed garlic
1 T paprika
Open the container of yogurt and dump in the chopped dill. Add the cumin, crushed garlic, and paprika. Stir it all up with a fork and smear it over the fish fillets. Turn them over and coat the other side. Broil or grill for 4-5 minutes on each side until flaky.
