Individual Apple Cobblers

Don’t you hate when you make something for dinner and just as you’re clearing the table after the meal you remember that you forgot to serve it? I did that today. I put the cucumber salad back in the frig for a minute which will turn into 24 hours.

I felt like making a quick dessert and everyone loves this.  Plus it’s fun and easy for kids to make and eat and they like to get their own personal dessert. Multiply this recipe by however many ramekins you want to make. For example, for four people, you would use 1 t cinnamon. It’s OK to heap the ramekins full. I did not and, as you can see, the mixture cooks down.

Individual Apple Cobblers
1 apple
2 T flour
2 T oats
1 T brown sugar
1 T butter
¼ t cinnamon
Preheat oven to 350. Peel and core the apples and slice into the ramekins. Mix the dry ingredients and cut in the butter until you have a crumble. Mix 1 T of oat mixture into each ramekin of apples, then mound the rest of the topping evenly over each one. Bake 30 minutes.
