BLTs and ELTs

About 40 tomatoes or various types.
These are all of the tomatoes I used for canning the other day, and the one sliced on the plate is a Mountain Girl.
You’ll have to resist the urge to run and get your car keys when you hear this, but today on the way to my son’s soccer practice, I saw a sign in front of Burger King that says “Chicken Fries are back.” I thought of buying some to take a picture in case anyone else is wondering what the heck a chicken fry looks like, but I didn’t want to get grease on my shorts or the seat of my car.
I looked it up when I got home and they are French-fry-shaped chicken strips. They were discontinued in 2012 and have been brought back to replace the low-fat fries, which bombed. I couldn’t find any ingredients or nutritional information on the BK website, but Calorie Count gives them a D rating with 390 calories (207 from fat),23g of fat (35% daily value), and980mg sodium (41% DV). Most of the fry is surface area, which is all fried, so I’m sure no one expects itto be good for you.
I don’t consider bacon to be healthy either, but a couple times a year, particularly in tomato season, I get a package of bacon from a farmer’s market for BLTs. And the rest of the time when I’m doing a good job of avoiding bacon, I make ELTs (egg salad, lettuce and tomato). My favorite variety of tomato to serve on _LTs is called Mountain Girl. As soon as I get a nice big one in hand, it’s time for some great sandwiches.

For ELTs, I don’t bother with a complete recipe of egg salad, I just smash one, hard-boiled farm egg and a tablespoon of mayo with a fork. So toast two pieces of fresh, healthy bread, put a little mayo on both pieces if it’s a BLT, put a thick slice of tomato on both pieces, make a very thick wad of lettuce and put it on one side, and put your filling (egg or bacon) on the other side. Now press the two sides together and it’s heavenly.
