Curry Chicken Salad

It was in the 90s today (I love spring but I was starting to wonder what happened to summer). While I was at work, the plumber came over and put in a sump pump since after the last deluge we had about 8” of water in the basement. Since Tony stayed home to let workers in and out, he decided to make a cold dinner for the hot day and found this recipe on Tasty Kitchen: A Happy Recipe Community – as opposed to all of those sad recipe communities. He left it in the bowl so I could, “Take a picture of it,” but it looked nice on the plate too.

Curried Chicken Pasta Salad

3 pounds shredded chicken
6 ounces dry pasta, cooked and drained
4 stalks celery, thinly sliced – leaves included (use interior ribs)
¾ C golden raisins
¾ C slivered almonds
½ C mayonnaise
½ C sour cream
1 C heavy cream
3 T curry powder, more or less (we used 2T)
1 t sea salt
Freshly ground black pepper
Whisk mayonnaise, sour cream, heavy cream, curry powder, salt, and pepper until well combined. Combine cooked shredded chicken, drained pasta, sliced celery, raisins, and almonds in a large bowl. Pour curry dressing over the top. Fold together with a rubber spatula. Make sure it’s all combined, then add more of whatever it needs. Chill for several hours. Serve with grapes.
