Easy Grilled Peach Cobbler

When it’s too hot to turn on the oven, here’s an easy peach cobbler to make on the grill. It’s also an excellent use of over-ripe peaches.

Peach Cobbler on the Grill

6-8 ripe peaches, mostly peeled and thinly sliced

3/4 C granola (I use vanilla almond)

1/4 C melted butter (half stick)

1/4 C light brown sugar

1 t cinnamon

 

Directions

Preheat the grill to medium/350. 

Slice the peaches as best you can, directly into a cast iron skillet. It’s fine if they’re a bit mushy and in big wedges. In a separate bowl, mix the granola, butter, brown sugar, and cinnamon. Top the peaches with the granola mixture. Put the skillet on the grill and keep it closed until the top is golden brown, about 15 minutes.
