Fruit Syrup

It only takes a few minutes to make a special syrup that will give your pancakes or waffles an attractive appearance and much improved flavor. After I run out of the berries I froze in the fall, I keep a bag or two or frozen organic fruit in the freezer, then pull some out when needed without having to plan it for a shopping trip.

If you’re making syrup because you don’t have or like maple syrup, substitute a mixture of half honey and half water for the syrup, or use agave syrup. If you don’t want to add any sugar whatsoever, whisk 1/4 cup water with a teaspoon of corn starch instead. You can easily multiply this recipe to serve more people.

Berry Syrup
1 C fresh or frozen berries
1/4 C maple syrup, or honey & water

Put the ingredients in a pot over low heat until warm and combined, slightly mashing the berries as they cooking.
