Kale Slaw

Tony was inspired by the kale slaw on his sandwich last Friday at Beck’s and found a recipe on the Food Network website which we highly modified to make it much simpler.  I try to make all of the recipes simple so that it’s more likely these foods will be practical for busy people.

This was the first time I’ve eaten raw kale. I heard someone at work recently commenting to someone that you can’t eat kale raw, so it’s a common misconception, but you do need to prepare it correctly including shredding it.

Kale Slaw
One bunch of kale
¼ red onion
1 carrot
1 T olive oil
1 T orange juice
1 t lemon juice
3 rounded Tablespoons mayo
¼ grated parmesan cheese
Slice the onion and cook it for a few minutes in a pan then let it cool. Meanwhile tear or chop the kale into very small pieces and grate the carrot and mix them in your salad bowl. Stir in the rest of the ingredients along with the onion and chill until you need it.
