Turkey Sausage

If you like using a lot of those little jars off your spice rack, you’re going to love making your own breakfast sausage. In the picture I put the spices in piles so you can see them, but sprinkle them evenly across the meat so they’re easier to mix; you want to blend them completely with the meat.

You do not need to use oil if you have a non-stick pan; there is enough fat in the meat even though it is lean turkey. When you find a farmer with ground turkey, particularly in the fall and winter, get a few packages for the freezer so you can pull them out when you want a substitute for other ground meats. The ground turkey I bought was $5 for a pound package. When you taste the sausage you will not want to have processed mystery factory meat sausage again. I serve it as a side to a vegetarian dinner entrée.

Turkey Breakfast Sausage
1 lb ground turkey
2 t sage
1 t thyme
1/2 t sea salt
1/2 t ground black pepper
1/4 t marjoram
1/4 t garlic powder
1/8 t nutmeg
1/8 t allspice

Mix everything together very well with a fork. Shape in patties and brown over medium-low heat. Flip and cover to brown the other side and completely cook the interior.
